time to share my favorite beef stew recipe. \u00a0It\u2019s a great comfort food that warms you up inside. \u00a0It\u2019s also incredibly easy! \u00a0It\u2019s got only a handful of ingredients with minimal prep work and then you toss it all into the crockpot and walk away.\u00a0<\/p>\n<p>We don\u2019t exactly have cold weather here in AZ, but I love to make this stew in the fall and winter on those \u201ccool\u201d nights. \u00a0I also bring my crockpot along every year on our summer vacation up in Colorado. \u00a0I can always count on at least one chilly day to make this. \u00a0It was while we were in Colorado that this stew also got the nickname \u201cThumb Stew.\u201d \u00a0One ill-fated morning in 2009, I was prepping the stew to go into the crockpot. \u00a0I was chopping the celery when disaster struck and I almost added about 1\/4\u2033 of my thumbtip to the recipe. \u00a0What came out of my mouth at that moment isn\u2019t appropriate for a family audience, so I\u2019ll let you use your imagination. \u00a0Thankfully my mom happened to come with us that year and heard my expletive from her bedroom in the cabin and came to see what had happened. \u00a0She woke my husband up and took care of the boys while he bandaged me and we took a ride into town to the hospital where they stitched my thumbtip back on. \u00a0To this day, I still break out in a cold sweat any \u00a0Two days later I came down with strep throat. \u00a0Worst. \u00a0Summer vacation. \u00a0Ever.<\/p>\n<p>Back to the stew. \u00a0Here\u2019s the handy recipe for you. \u00a0Just please don\u2019t be like me and try making it \u201cThumb Stew.\u201d \u00a0Oh, and for those of you who love healthy recipes, this is low fat! \u00a0Our favorite way to enjoy this stew is with some piping hot Grands
