\u00a0Having had my own home-based cake business for several years has made me a bit of a cake snob. \u00a0I <del>can\u2019t stand<\/del> don\u2019t like the artificial flavoring you find in some cakes and cupcakes.\u00a0\u00a0I once paid three dollars for a \u201cmargarita\u201d cupcake that had zero margarita and all artificial lime flavoring. \u00a0It tasted like a green Life Saver and it took hours for me to get that taste out of my mouth. \u00a0I\u2019m totally okay with green life savers. \u00a0Just not in a cupcake.<\/p>\n<p style=\"text-align: center;\">These cupcakes are baked with lime juice, lime zest and then are brushed with a lime simple syrup. \u00a0I made them for a BBQ this past weekend and one of my cousins admitted that he doesn\u2019t really like cupcakes, but he loved these. \u00a0You don\u2019t normally think of a cupcake as being refreshing, but these totally are! \u00a0They\u2019re perfect for a spring party, Easter, Mother\u2019s Day, etc. \u00a0Sometimes I even like to make them with coconut buttercream frosting for a tropical twist:) \u00a0All cupcake recipes say to fill the liners at 2\/3 full. \u00a0The easiest way that I\u2019ve found to do this is with an ice cream scoop\u00a0{affiliate link}<img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" alt=\"\" src=\"data:image\/svg+xml,%3Csvg%20xmlns='http:\/\/www.w3.org\/2000\/svg'%20viewBox='0%200%201%201'%3E%3C\/svg%3E\" width=\"1\" height=\"1\" border=\"0\" data-lazy-src=\"https:\/\/ir-na.amazon-adsystem.com\/e\/ir?t=ad2di-20&#038;l=as2&#038;o=1&#038;a=B00004UE65\">. \u00a0Not only does it save you from accidentally over or under filling your cupcake liners, but it makes the whole process go super fast!<br \/>\n\u00a0<\/p>\n<div class=\"mailmunch-forms-in-post-middle\" style=\"display: none !important;\"><\/div>\n<div class=\"easyrecipe\">\t<link itemprop=\"image\" href=\"https:\/\/addicted2diy.com\/wp-content\/uploads\/2014\/03\/Lime-Cupcakes-w-Cream-Cheese-Frosting-Addicted-2-DIY.jpg\">\n<div class=\"item ERName\">Lime Cupcakes with Cream Cheese Frosting<\/div>\n<div class=\"ERClear\">\u00a0<\/div>\n<div class=\"ERHead\"><span class=\"xlate\">Recipe Type<\/span>: <span class=\"type\">Cupcakes<\/span><\/div>\n<div class=\"ERHead\">Serves: <span class=\"yield\">18<\/span><\/div>\n<div class=\"ERSummary summary\">Fresh lime flavored cupcakes topped with delicious cream cheese frosting<\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">For the cake:<\/li>\n<li class=\"ingredient\">4 oz (1 cup) cake flour<\/li>\n<li class=\"ingredient\">4 oz (1 cup) all-purpose flour<\/li>\n<li class=\"ingredient\">1 1\/8 tsp baking powder<\/li>\n<li class=\"ingredient\">1 stick (1\/2 cup) unsalted butter (softened)<\/li>\n<li class=\"ingredient\">10 1\/2 oz (1 1\/2 cups) granulated sugar<\/li>\n<li class=\"ingredient\">1\/2 tsp salt<\/li>\n<li class=\"ingredient\">1\/2 tbsp pure vanilla extract<\/li>\n<li class=\"ingredient\">1\/2 cup egg whites (about 4 eggs)<\/li>\n<li class=\"ingredient\">6 oz (3\/4 cup) whole milk<\/li>\n<li class=\"ingredient\">1 tbsp lime zest<\/li>\n<li class=\"ingredient\">1\/2 tbsp lime juice<\/li>\n<li class=\"ingredient\">Simple Syrup:<\/li>\n<li class=\"ingredient\">1\/2 cup granulated sugar<\/li>\n<li class=\"ingredient\">1\/2 cup water<\/li>\n<li class=\"ingredient\">1\/4 cup lime juice<\/li>\n<li class=\"ingredient\">Cream Cheese Frosting:<\/li>\n<li class=\"ingredient\">1 sticks unsalted butter<\/li>\n<li class=\"ingredient\">4 oz (1\/2 of a bar) cream cheese<\/li>\n<li class=\"ingredient\">1 lb powdered sugar<\/li>\n<li class=\"ingredient\">2-3 tbsp milk<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Preheat the oven to 350 degrees.<\/li>\n<li class=\"instruction\">In a large bowl, sift together the flour, baking powder, and salt.<\/li>\n<li class=\"instruction\">In a mixer, cream together the butter and sugar.<\/li>\n<li class=\"instruction\">Add the vanilla extract, lime juice, and lime zest and mix until combined.<\/li>\n<li class=\"instruction\">Pour in the egg whites and mix until thoroughly combined, scraping the bowl afterward.<\/li>\n<li class=\"instruction\">Alternately add the flour mixture and milk, scraping between additions. Do not overmix.<\/li>\n<li class=\"instruction\">Line muffin tins with cupcake liners and fill 2\/3 full with the batter.<\/li>\n<li class=\"instruction\">Bake for 16 minutes or until a toothpick inserted in the center comes out clean.<\/li>\n<li class=\"instruction\">Cool completely.<\/li>\n<li class=\"instruction\">While the cupcakes are baking, make the simple syrup by combining the sugar and water in a small saucepan. Bring to a boil and then immediately remove from heat to let it cool. Once cooled, pour in the 1\/4 cup lime juice. Poke the cupcakes a few times with a toothpick and then brush with the simple syrup. I usually brush them two times.<\/li>\n<li class=\"instruction\">For the frosting, combine the butter and cream cheese in a mixer and slowly add the powdered sugar. Alternately add the milk 1 tbsp at a time until desired consistency. Pipe or spread onto cupcakes. If desired, top with more lime zest.
